## Résumé

Un stir-fry rapide de poulet haché, sauce soja-huître-poisson, piments, échalotes et basilic, servi sur riz blanc avec œuf au plat.

## Ingrédients

### Sauce
- 1 c. à soupe de sauce soja
- 1 c. à soupe de sauce soja noire, ou sauce soja classique
- 2 c. à soupe de sauce huître
- 1 c. à soupe de sauce poisson
- 2 c. à café de sucre
- 1/4 cup d’eau, environ 60 ml

### Poulet sauté
- 2 c. à soupe d’huile d’avocat, ou autre huile neutre
- 2 grosses échalotes, finement émincées
- 4 gousses d’ail, finement hachées
- 1 piment Fresno, peu piquant, coupé en fines lanières
- 1 piment thaï, piquant, coupé en fines rondelles
- 450 g de poulet haché, idéalement 96/4 ou similaire, pas uniquement blanc de poulet
- 2 oignons nouveaux, émincés
- 2 cups de feuilles de basilic frais ou basilic thaï, environ 2 belles poignées
- 4 cups de riz blanc cuit pour servir

### Œufs
- 1 c. à soupe d’huile d’avocat, ou autre huile neutre
- 4 œufs
- Sel

## Préparation

1. Mélanger tous les ingrédients de la sauce dans un bol et réserver.
2. Préchauffer un grand wok ou une grande poêle à feu moyen-vif. Ajouter l’huile et les échalotes. Faire revenir 2 à 3 minutes en remuant, jusqu’à ce qu’elles soient tendres.
3. Ajouter l’ail, le piment Fresno et le piment thaï. Cuire encore 1 minute en remuant.
4. Ajouter le poulet haché. Cuire 3 à 4 minutes en l’écrasant en petits morceaux irréguliers, jusqu’à ce qu’il soit bien cuit.
5. Verser la sauce et ajouter les oignons nouveaux. Cuire 2 à 3 minutes en remuant, jusqu’à ce que la sauce enrobe bien le poulet et soit chaude.
6. Couper le feu, incorporer le basilic, puis couvrir pour garder au chaud pendant la cuisson des œufs.
7. Dans une autre poêle chaude à feu moyen, ajouter l’huile puis les œufs. Les cuire au plat avec une pincée de sel : blanc pris, jaune encore coulant.
8. Incliner la poêle et arroser le dessus du blanc avec l’huile chaude à la cuillère pour finir la cuisson sans durcir le jaune.
9. Servir le poulet au basilic sur du riz blanc chaud, avec un œuf au plat par-dessus.

## Notes cuisine

- Dose le piment thaï selon ton niveau de tolérance : il est beaucoup plus fort que le Fresno.
- Le basilic thaï donne le goût le plus authentique, mais du basilic classique fonctionne aussi.
- Pour une version plus douce, retire le piment thaï et garde seulement le Fresno.

Thai basil chicken✨

Sauce:
▪️1 Tbsp Soy Sauce
▪️1 Tbsp Dark Soy Sauce (or sub regular soy sauce)
▪️2 Tbsp Oyster Sauce
▪️1 Tbsp Fish Sauce
▪️2 tsp Sugar
▪️1/4 Cup Water

Stir Fry:
▪️2 Tbsp Avocado Oil (or other oil)
▪️2 Large Shallots, sliced thin
▪️4 Cloves Garlic, finely chopped
▪️1 Fresno Chili (not very spicy), sliced in thin strips
▪️1 Thai Chili (spicy), sliced in thin rounds
▪️1 lb. Ground Chicken (96/4 or similar, not breast-only)
▪️2 Scallions, sliced
▪️2 Cups Fresh Basil or Thai Basil Leaves
▪️4 Cups Cooked White Rice, for serving

Eggs:
▪️1 Tbsp Avocado Oil (or other oil)
▪️4 Eggs

1️⃣ Mix together the ingredients for the sauce and set aside.
2️⃣ In a large wok or pan preheated over medium-high heat, add the oil and shallots. Cook, stirring, for 2-3 mins until tender, then add the garlic, fresno chili, and Thai chili. Cook, stirring, for 1 more min.
3️⃣ Add the ground chicken and cook for 3-4 mins until cooked through, breaking it up into small irregularly sized pieces.
4️⃣ Pour in the sauce and add the scallions. Cook, stirring, for 2-3 mins until the sauce coats the chicken and gets heated through, then turn off the heat and stir in the basil. Cover to keep warm while you fry the eggs.
5️⃣ In a separate pan preheated over medium heat, add oil to coat the pan then add the eggs. Fry eggs sunny side up with a sprinkle of salt until the white is set but the yolk is still runny. Tilt the pan, scoop up the hot oil with a spoon, and baste the top of the egg white to help it cook through.
6️⃣ Serve the basil chicken over warm rice with fried eggs on top and enjoy!
